Hyderabadi chicken biryani is very popular and known recipe in hyderabad and all other parts of India. To my knowledge there are two ways to prepare biryani. One is, pre-cooked chicken method and the other is raw meat method. The common in both the methods is 80% cooked rice and make layers and cook in low heat. I used second method as its is more convenient to cook in conventional ovens and the rice gets cooked with great aroma from the cooked meat and you will get nice natural color rice.
Here is how you can make veg dum biryani on stove top (without oven). If you like to cook in oven go to Chicken Biryani the process is same but add vegetable instead of chicken. If you like to cook in cooker go to Mushroom Biryani same process but add vegetable instead of mushrooms.
